4th. of July Whoopie Pies!

Good morning!
I thought that it might be nice to kick off the day with a patriotic recipe! For those of you who have never heard of a whoopie pie, you have certainly been missing out! You start out with this simple chocolate cookie recipe. However, it is the marshmallow fluff frosting that creates the full effect!

*We usually use butter due to certain food allergies in the family. Using butter will make them spread a little thinner and they will dry out faster. Using shortening will make them less crumbly and less dense.

Whoopie Pie Recipe

2 Cups flour

1 Cup sugar

1/2 Cup cocoa powder

1/2 teaspoon salt

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 Cup shortening or butter*

1 Cup milk

1/2 teaspoon vanilla extract

1 egg


   Sift together first 6 ingredients into bowl. Add next 4 ingredients and blend. Drop by teaspoon onto ungreased cookie sheet. Bake 375 degree oven for 10 min. tops will be cracked.


Whoopie Pie Frosting Recipe

1/2 Cup shortening (you could substitute butter but the flavor and texture would be different)

1/2 small jar marshmallow fluff (7 1/2 oz.)

2 Cup confectioners sugar (you may need more)

4 Tablespoon milk

1 teaspoon vanilla extract


   Beat until creamy and put between 2 cookies.
